Why yogurt and kefir are the easiest place to start

Yogurt contains nearly as much lactose as milk, yet people who react badly to a glass of milk often eat yogurt happily. That isn’t imagination — the bacteria are doing part of your digestion for you.
The mechanism
Yogurt is milk fermented by live bacteria — traditionally Streptococcus thermophilus and Lactobacillus delbrueckii subsp. bulgaricus. Two things follow:
- The cultures eat some lactose during fermentation. Not most of it, but some, which is why yogurt comes in slightly below milk on the label.
- The cultures carry their own lactase, and it keeps working inside you. The bacteria survive stomach acid reasonably well in the physical matrix of yogurt, and the enzyme they carry continues splitting lactose in your small intestine — doing the job your own lactase isn’t doing.
That second point is the interesting one, and it’s well enough established that European regulators allowed a health claim for live yogurt cultures improving lactose digestion. It’s also why heat-treated yogurt is a different proposition: pasteurising after fermentation kills the cultures and removes the benefit. Look for “live” or “active” cultures.
Yogurt’s thickness helps too. It leaves the stomach more slowly than a liquid, so lactose arrives downstream gradually rather than all at once — the same reason taking dairy with a meal works.

Strained yogurts like Greek and skyr go further, because straining removes whey — and lactose leaves with it. Kefir is fermented by a broader culture including yeasts, and tends to be tolerated well for the same enzymatic reason. The full table for every other dairy food is here.
The catch worth understanding
If the cultures digest the lactose, less of it reaches your colon — and colonic exposure is what drives adaptation. So yogurt is, mechanically, a gentler training stimulus than the same lactose as milk.
That is not an argument against yogurt. It’s an argument for knowing what it’s for:
- Yogurt and kefir are an excellent place to begin, because “I had dairy today and nothing bad happened” is the habit you need before any of the rest matters, and because they’re genuinely easier.
- Milk is the more efficient training dose once you’re comfortable, because more lactose gets through to the bacteria you’re trying to shift.
- Unlike a lactase pill or aged hard cheese, yogurt still delivers a real amount of lactose, so it does count. Lactico converts a 150 g pot into its milk-equivalent and credits you for it.
Practical notes
- Check the sugar, not just the lactose. Flavoured yogurts add a lot of it. Plain, with fruit you add yourself, is a better everyday habit.
- “Lactose-free” yogurt is a different product — the lactose has been pre-split with added lactase. Comfortable, but it trains nothing, for the same reason a pill doesn’t.
- Probiotic supplements aren’t a substitute. The effect described here comes from the cultures arriving alongside the lactose, in the food.
- Kefir is worth a smaller first serving than yogurt. A 250 ml glass carries more lactose than a 150 g pot, and it goes down like a drink rather than a snack.
Where this fits
If dairy currently ruins your day, start with a small pot of live yogurt with a meal, most days, and let it be unremarkable for a week. Then start nudging the amount, and eventually swap some of it for milk, where the lactose actually reaches the bacteria you’re training.
